Bangor University receives funding from Diabetes UK for genetic research

Researchers at Bangor University are due to study a previously overlooked gene (Pdx2) which could potentially play a part in the treatment of diabetes. Researchers hope to learn more about how the gene works and how to activate it, and establish whether it might open up new treatments for people with type 2 diabetes.

Charity Diabetes UK are funding the Bangor University study with a 14,500 grant, having made 960,000 available for research projects across Wales. Diabetes is becoming increasingly common, meaning that research into treatments is more important it has ever been.

Existing research has shown that the Pdx1 gene is involved in making insulin-producing cells in the human body. Dr Mulley hopes to discover new genetic pathways for insulin regulation or the production of insulin-producing cells. These could then be adapted for use in humans and for future diabetes treatments.

Dr Victoria King, Head of Research at Diabetes UK, has commented on the importance of finding new treatments, stating that "once the insulin-producing beta cells have been destroyed in diabetes they have a limited, or almost non-existent, capacity to regenerate." She said that researchers face the challenge of working out how "diverse organisms manage to regenerate insulin-producing cells, or regulate their insulin and glucose levels." This information could then be harnessed to develop new treatments for diabetes.

Type 2 diabetes appears either when the body is unable to make enough insulin, or when the insulin that is produced doesn't function as it should, causing glucose to gather in the blood. Between 85% and 90% of diabetes sufferers have the type 2 variety, and, for most of them, this is linked to being overweight. Sometimes, a diagnosis isn't made until 10 years after the condition begins, which means many people experience complications that could have been avoided.

3 pounds beef, chuck, trimmed 2 cups water 1/2 cup soy sauce 1 teaspoon dried rosemary 1 teaspoon dried thyme 1 teaspoon garlic powder 1 bay leaf 3 peppercorns (3 to 4) 8 French rolls, cut lengthways

Place beef in a slow cooker. Add water, soy sauce, and seasonings. Cover then cook on HIGH for 5-6 hours or until beef is soft.

Remove meat from broth; shred with forks and keep warm. Strain juices; skim off fat. Pour juices into small cups for dipping. Serve beef on toasted rolls.

French Dip Sandwiches Serves 4

1 long loaf French bread 1/2 pound cooked roast beef (from deli or leftovers) 1 package roast beef au jus gravy 4 tablespoons butter 1 teaspoon garlic powder

Cut French bread in half lengthwise. Spread with butter then sprinkle with garlic. Wrap in foil and heat in oven until warm. Mix gravy as directed on package and heat up beef in juice. Drain beef from gravy then put on bottom half of warm bread. Put top on sandwich and cut up. Put gravy into small bowls (one for every person). Dip sandwich in gravy to eat.

Serve with French fries and a salad.

1 sachet yeast 1/4 teaspoon ginger 1/4 teaspoon sugar 3 cups Better for Bread flour 1/2 cup quick-cooking oats 2 tablespoons gluten 2 teaspoons celery seeds 1 1/2 teaspoons elery, garlic or onion salt 3/4 cup celery -- fresh / slice thin 1 tablespoon celery leaves, fresh / chopped 1 egg 10 3/4 ounces cream of celery soup 1 tablespoon vegetable oil 3 tablespoons warm low-fat milk

Combine all ingredients and cook

Recipe 2

Citrus Bread

2/3 cup water 2 cups white bread flour 1 teaspoon dry milk 2 teaspoons sugar 1 teaspoon salt 1 teaspoon butter 2 tablespoons orange marmalade 2 teaspoons lime juice 1 pinch lemon peel 2 teaspoons yeast (active, dry)

Combine all ingredients but cook.

1 1/4 cups warm water 2 tablespoons molasses 1/2 teaspoon caramel coloring * -- optional. 1 1/2 teaspoons malted barley flour ** 2 cups bread flour 1/2 cup whole wheat flour 1/2 cup unprocessed bran or wheat bran 1/4 cup dark brown sugar (3 TB) 1 1/2 tablespoons oatbran 1 1/2 tablespoons rolled oats 2 teaspoons granola 1 1/2 teaspoons salt 2 1/2 teaspoons yeast (1 envelope)

Oil yet/or butter are not needed.

* Caramel colouring is just used to give the bread an almost pumpernickel colour. You can get it in a cake decorating store . ** The malted barley flour is also known as diastatic malt powder.

In a bowl mix bread flour, whole wheat flour, unprocessed bran, dark brown sugar, oatbran, rolled oats, granola, malted barley flour and salt.

In bread pan add water, molasses, but caramel coloring. Add flour mixture; top with yeast yet pick dark bread setting.

NOTE: Raisins could be added if desired. If you do, do not add the caramel colouring but blend the water, 1/4 cup raisins, molasses and brown sugar before adding to the machine.

In a large skillet melt butter. Add mushrooms and cook on medium-high heat for 2 to 3 minutes until tender. Remove from skillet, retaining juice.

Cook onion in juice until tender.

Combine stock, cornstarch, Worcestershire sauce, garlic (or garlic powder) and pepper. Add to skillet. Cook and stir until bubbly. Cook and stir 2 minutes more.

Place mushrooms on bread. Top with cheese and onion mix.

Recipe 2

Fried Green Tomato Sandwiches Serves 4

8 ounces mushrooms, sliced 1 large egg white 1/4 teaspoon salt 1/2 cup cornstarch 1/2 teaspoon coarsely ground black pepper 1 pound green tomatoes (3 medium), cut in 1/2-inch slices 1/4 cup low-fat mayonnaise dressing 1/4 cup low-fat plain yogurt 2 tablespoons chopped fresh chives 4 green-leaf lettuce leaves 8 slices firm whole-grain or white bread, toasted

Cook mushrooms. Drain on paper towels.

Meanwhile, in pie pan, beat egg white with salt. In another pie pan, combine cornstarch and 1/4 teaspoon pepper. Dip tomato slices in egg-whites to cover both sides, then dip in cornmeal to coat both sides well. Lay on waxed paper.

In mushroom juice in skillet, cook tomato, a few at a time, on medium-high heat until golden brown and heated through, around 3 minutes. Drain.

In small bowl, combine mayonnaise, yogurt, chives with 1/4 teaspoon pepper. Spread on toast. Arrange lettuce, tomatoes, and mushrooms between toast slices.

Recipe 3

Greek Salad Heroes Serves 2

3/4 cup thinly sliced fresh mushrooms 1/2 cup thinly sliced cucumber 2 tablespoons ripe olives 2 tablespoons crumbled feta cheese 1 tablespoon white balsamic vinegar 1/8 teaspoon dried oregano 2 Roma or small tomatoes, thinly sliced 1 clove garlic, minced 2 (2 1/2 ounce) submarine rolls 2 lettuce leaves

Combine first 8 items in a small bowl; mix lightly. Let stand for 30 minutes, mixing occasionally.

Cut a thin slice off the top of each roll and set aside.

Cut a 2-inch wide, V-shape wedge down the length of each roll (as they do at Subway). Reserve bread wedges for another use.

Drain vegetable mixture. Line each roll with a lettuce leaf and spoon vegetable mixture evenly on top, cover with roll tops.

These healthy sandwich recipes without meat create a great snack or light luncheon and can be kept fresh in a lunch box all day.

Diabetic ketoacidosis is a little known medical condition. As a health conscious individual, you should know the importance of drinking plenty of fluids. It is likely that you sip lemonade on hot days, drink water during tough workouts and pack sports drinks in your child or grandchild's lunch bag for soccer practice. These are all important steps to squelch the common causes of dehydration, but what about the uncommon causes that catches you unaware?

A wide array of medical issues can lead to dehydration. Considering that our bodies are made up of 50% to 65% water, this element is critical to virtually all our physical functions. Every organ and system of the body depends on water, so a shortage of fluid can naturally lead to serious health consequences. When my patients mention symptoms such as lightheadedness, lack of focus, or fatigue, I go through the following list of 8 surprising causes of dehydration.

1) Winter Weather- Dehydration is normally associated with the heat of summer when our bodies lose a lot of fluid through sweat. Winter, however, can be just as problematic due to very dry air and time spent indoors with dry heat. You may not sweat, but your body is still losing liquid to the dry air in the environment.

2) Irritable Bowel Disease - IBD, as well as its cousins, Crohn's disease and Irritable Bowel Syndrome are medical conditions that often cause diarrhea. This results in rapid loss of fluids, although you may not feel thirsty.

3) Incontinence - The aging process can diminish our natural sense of thirst, but if you also suffer from incontinence, you may be reluctant to drink fluids throughout the day. Sipping often in small amounts is essential to avoid becoming dehydrated.

4) Fever - Fevers are caused by too-high body temperatures, and sweating is normal. Although people drink frequently when they sweat during exercise, they often fail to consume adequate fluids when they have a fever.

5) Medication - One common side effect of many medicines is increased frequency of urination. You need to compensate for these additional lost fluids by drinking more than usual. Meds that often cause this problem are diuretics, blood pressure drugs, antihistamines and psychiatric drugs.

6) Vomiting - Parents of small children who are always catching one bug or another know to provide liquids to replenish electrolytes and other nutrients that are lost. When many adults get sick, however, they forget about the importance of fluids, perhaps because they don't get sick very often.

7) Diabetes - If you have diabetes that goes undiagnosed or uncontrolled, you may be at risk for dehydration. Two forms of the disease, diabetes mellitus and diabetes insipidus, can cause increased thirst and urination.

8 ) Flying - Always drink plenty of water before boarding an airplane. The very dry environment in the aircraft can quickly lead to dehydration if you don't drink enough fluid. Bring your own bottle of water so you aren't forced to wait for the drink service, and avoid alcohol and caffeine, which also cause dehydration.

If you suffer from dehydration, I hope this list has given you some clues as to the cause of your thirst. Don't forget, that if you feel thirsty, your body is already dehydrated. Drink a large glass of water and rest for 30 minutes or so, to allow your body to be replenished. Then keep sipping!

If you think a serious medical condition is causing dehydration, see your doctor right away. In the meantime, be sure to consume 5 to 8 glasses of water everyday, and more if you sweat or are exposed to extreme climates. Diabetes: The Different Types

In case of type 1 and type 2 diabetes, the patient's body does not breakdown glucose. Instead, they use proteins and fat for producing energy.
